🌸 Cacao & Cinnamon Oats 🌸 What's your go-to breakfast during the week? Lately I've been eating a lot more oats because they're so filling & versatile, you can try so many different flavour combinations!πŸ’— Today I added cacao powder for some chocolatey goodness, cinnamon, coconut oil for some added healthy fat, ground seed mix (chia, sunflower, sesame), maple syrup, oat milk, pumpkin seeds, hazelnuts & flaked almonds! πŸ˜‹ It's so delicious, easy, healthy & sets you up for the day!πŸŽ€
πŸ•πŸ˜ Sweet Potato Pizza Crust with Vegan Mozzarella & Courgette Pepperoni πŸ˜πŸ• This delicious vegan pizza is free from gluten, soy, nuts, oil, salt, dairy & eggs so is perfect for sharing with everyone, no matter what their allergies/dietary preferences! πŸ™Š It's also perfect for not sharing at all & eating as much as you want as it's super healthy & tastes incredible πŸ˜‹ Why not save this recipe for later?πŸ“₯❀️ Ingredients: β€’1 medium sweet potato β€’1/2 courgette (zucchini) β€’1 1/2 cups chickpea flour β€’1 cup oat flour β€’1 tbsp liquid aminos β€’1/2 tsp apple cider vinegar β€’1 tsp smoked paprika β€’1/4 tsp each oregano, basil, dried garlic β€’dash of chilli flakes β€’4 tbsp water β€’1/2 cup tapioca flour β€’1 cup oat milk (or any plant milk) β€’1 tbsp nutritional yeast β€’pepper to taste Method: Finely slice the courgette, mix together the liquid aminos, apple cider vinegar, paprika, herbs, chilli flakes & water in a container & marinate the courgette slices in the mixture for at least 15 mins, the longer you leave them the better the flavour, I left mine in the fridge for about an hourπŸ₯’ Peel, chop & boil sweet potato until soft. Drain the potato & allow to cool a bit before mashing. Once mashed, add in the chickpea & oat flour & mix until well combined. You can also use all oat flour or all chickpea flour, or try another kind of flour! 🌞 Wet your hands to stop the dough sticking to them & form the dough into a ball, transfer to a lined baking tray & use your fingers to press it out into either a circle or rectangular shape, bake in a preheated oven at 210 degrees Celsius for around 10-15 minsπŸ• Heat a pan on medium-high & fry the courgette slices in a drop of the marinade for a few minutes on each side. Add the tapioca flour, oat milk & nutritional yeast & pepper to a pot & cook on medium heat, stirring constantly with a whisk until it becomes extremely thick & stringy, just like mozzarella!πŸ’› Put the 'mozzarella' on the pizza base along with the courgette pepperoni & any other toppings you like, I used spinach, cherry tomatoes & black olives! Bake in the oven for a further 10 minutes or until crispy! πŸ˜‹ The full recipe will be up on the blog very soon so stay tuned! 🌸
Bringing some floral magic your way today along with a new recipe for this flu-fighting roasted beetroot & butternut squash soup 🌸✨ This soup also has the perfect amount of roasted ginger & garlic to beat the cold & the chickpeas make it so filling!πŸ’“ Also, I just wanted to touch on a topic that I've been a bit on the fence with lately & that is vegan/ethical fashionπŸŽ€ Ethical fashion can mean different things to different people, what does it mean to you? Do you think it's better to buy a leather handbag from a thrift store or to buy a faux leather handbag from a massive chain? The leather handbag is definitely not vegan but it's more sustainable as its second hand & most likely good quality but the faux leather handbag from the chain store is vegan friendly. So which is more ethical? In my opinion, neither. They're both ethical in different ways & they both come with different unethical aspects too, the question is, what is more important to you? There are people who will give out to you for buying from the unsustainable chain store & there are others who will shame you for wearing second hand leather, but at the end of the day it all comes down to your own morals, understanding & compassion. Personally, I think we'd all be better off just appreciating both sides. Either way you are making a conscious decision to not wear leather or to not buy from an unsustainable company so either way you're making a small positive impact. You can't please everybody but you also can't always help everybody & as long as you're doing something good with intent & making an educated, evaluated choice then keep doing what you're doing because you are helping someone, be that an animal, human or the planet. 🌸 Gluten-Free Creamy Cauliflower, Cashew & Beetroot Fettuccine 🌸 This dish is so simple & healthy yet tastes so rich & delicious, you definitely won't miss the dairy (or the gluten)! I found these edamame fettuccine in Lidl for around €2.50 I think & have gotten around four servings out of one bag which I think is pretty good value for gluten free & organic! I love sneaking in veggies like cauliflower or beetroot by making a sauce with them because sometimes you just feel like eating a big comforting bowl of creamy goodness & nothing else πŸŽ€ Recipe for this coming soon on the blog so stay tuned 🐰

This little photo shoot started off with getting a photo of my nails but Luna's just too cute πŸ™Š Swipe to the third pic to see my nails & keep going for some bonus pics of Luna πŸ˜‹ I do my own gel nails at home using @the_manicure_company gel nail kit which is completely vegan & cruelty free as well as being 5-free! 🌸 They're also an Irish company so that's a huge plus for me too & are very affordable. Getting your nails done in the salon every few weeks can be costly, bad for the environment & most likely not vegan/cruelty free so if you are someone who loves having gel/shellac nails I highly suggest investing in a (safe) UV or LED lamp & doing them yourself using products from an ethical brand, preferably from your country to keep those travel miles downπŸ™ˆ Or if you don't know how to do gel nails & don't want to learn/take a course you can always ask your local nail salon what products they use & ask them nicely to consider using vegan/cruelty free products if they aren't already πŸ’“ If you want change you have to make it & you never know until you try 🐰 (P.s. new recipe on the blog, link in bio)

Looking through my photos & wishing it was still summer but then I remember it's almost Christmasβ£οΈπŸ™Š I probably won't be posting much until after Christmas because I have sooo much to do, cooking the entire dinner plus starters & desserts for 6 people this year! I'm starting the cooking today & tomorrow though so that I can actually enjoy the day 😁 Dress is from @needleandthreadlondon πŸ’“ I did so much research on this brand before buying & they are honestly so amazing! Their ethical statement is so thorough & transparent, they employ a permanent team of workers, they do not test on animals, they don't use fur, skins or angora, most of their products are vegan (they only use wool & cashmere in their knitwear), they create timeless pieces that are sustainable and made to last, all of their packing is 100% recyclable & they just seem so aware & constantly working towards change which is pretty much the best you could ask for from a company these days! 🌸 I'll be doing a full blog post on them when it gets a little bit warmer & I can prance around in the sunshine taking lovely pictures to do this gorgeous dress justice! πŸ’“
