Festive Rosemary & Beetroot Hummus

This recipe is super simple, delicious and ready in minutes! It makes for a satisfying holiday snack, perfect addition to a roast leftovers sandwich or as a lovely and festive side dish.
To make this dreamy hummus you will need:
  • 1 can of chickpeas, drained and rinsed
  • 3-6 slices of jarred beetroot, depending on your preferences
  • 1/4 tsp of tahini
  • Squeeze of lemon juice
  • 1 small clove of garlic
  • 1 tsp of dried rosemary
  • 2 tsp of olive oil
  • Drop of water, depending on how smooth/thick you want it
  • Salt & pepper to taste
Pulse all of the ingredients together in a blender, add more water as needed until you reach desired consistency.
It couldn’t be easier! I served mine with some seeded thins and garlic and sea salt crackers, then just topped it with paprika, olive oil and dried rosemary.
